Thank you for visiting AKEMI’s SUSHiKiTCHEN's website!
I’m Akemi Castellano, the owner of this cooking lesson and also a certified sushi chef.
I opened this lesson for tourists visiting from overseas, foreign citizens living in Japan, and Japanese people who want to learn about authentic Edo-mae Sushi.
Japanese cuisine (Washoku) has been registered as a UNESCO Intangible Cultural Heritage since 2013. Sushi is an essential part of Japanese food culture, and has become very popular around the world, because it is fresh, delicious, and healthy.
We welcome guests into our home, so they can learn how to make several popular types of sushi in a relaxing, at-home environment. We will lead you through the entire process, starting from the preparation of the vinegar rice. It’s perfect for anyone looking for a unique experience that shows a different side of Tokyo.
Join us to learn how sushi is made, and enjoy the hospitality of a Japanese home kitchen at the same time. We offer a taste of Japanese culture that you won’t find at restaurants and tourist spots.

Hello, everyone.
I am Akemi Castellano, the owner of AKEMI’s SUSHiKiTCHEN.
I was born and raised in Tokyo.
I have been interested in English since I was little, and I spent some time in England after I graduated from high school.
After I returned to Japan, I studied business in college, and then worked in international cooperation in an office affiliated with the Ministry of Health, Labour and Welfare, where I had the opportunity to teach many foreign visitors about Japanese culture.
As I interacted with visitors from countries around the world, many of them expressed an interest in Japanese food, saying, “Japanese food is healthy and delicious,” and “I have never eaten this in my home country.”
I often heard people saying “I’d like to try making this at home,” so after my children got a little older, I decided to open a sushi cooking class in my home.
I encourage you to get away from the hustle and bustle of Tokyo, and try this lesson, where you will feel like you are visiting a friend’s house.
Eating delicious Japanese food, you will feel refreshed in both body and mind.

Lesson Contents
During the lesson, we will make four kinds of sushi:
*Inari sushi
*Rolled sushi
*Battleship sushi
*Hand-pressed sushi
Guests are then treated to a delicious meal of the sushi that they made themselves.
Four ingredients that set us apart
*Rice
We procure rice that is specially blended for sushi from “Hachidaime Gihey,” a long-established rice supplier in Kyoto (founded in 1778).
*Neta (fish)
We get fresh seafood “neta” from Toyosu Market and Tsukiji Outer Market in Tokyo.
*Red vinegar
We use “Yamabuki” red vinegar, which has been made since 1845 by Mizkan (founded in 1804). You can enjoy Edo-mae sushi made with red vinegar that is aged for three years, still produced using a traditional brewing process.
*Nori (seaweed)
We use high-quality seaweed from the Seto inland sea, because it has the perfect thickness and aroma for sushi.

We cannot accommodate special requests regarding allergies, including foods or animals. If you have any concerns, please let us know in advance.
Please note that once a reservation has been confirmed, cancellations will be accepted up to 48 hours before the start of the lesson. From 48 hours to 24 hours before the start of the lesson, there will a 50% cancellation charge, and less than 24 hours before the starting time, the full price will be charged.

We are conveniently located, with easy access from both Shinjuku and Shibuya Stations.
We will come to meet you at one of two stations:
① Sasazuka Station (Keio Line; 5 min. from Shinjuku Station)
② Shimokitazawa Station (Inokashira Line; 8 min. from Shibuya Station)
